Quick Cottage Cheese, Tomato & Spinach Bites

These bites are the perfect snack when you’re hungry and can be enjoyed guilt free as part of a balanced diet! This recipe can easily be adapted to include your favorite ingredients, so feel free to do so.

Ingredients

  • 200 g cottage cheese

  • 125 g flour

  • 3 tsp baking powder

  • 1 tsp salt

  • 1 tbs olive oil

  • 45 g spinach, finely chopped

  • 60 g shredded (mozzarella) cheese

  • 3 sundried tomatoes, chopped in small pieces

  • 1 egg

  • Optional: mix of seeds & spices

  • Baking tray & parchment paper

  • Kitchen scale

  • Food processor

  • Whisk & brush

Instructions

  • Preheat oven to 180 °C fan forced and line a baking tray with parchment paper.
  • In a small food processor, pulse your cottage cheese until it is smooth.
  • To a large bowl, add the cottage cheese, salt, sundried tomatoes, flour, cheese, baking powder, and spinach, and mix together with your hands until combined.
  • Divide the dough into 6 equal pieces. Roll each piece into a ball, then make the ball a bit flat and poke a hole in the middle with your finger.
  • Beat the egg. Place the 6 pieces on the baking sheet and brush them with the egg wash. Optional: Top some or all of them with seeds or a spice mix you like (I topped half of mine with a mix containing sesame seeds and spices like garlic and paprika powder). Bake for 22-25 minutes or until golden brown on top. Let them cool down or eat them warm, both alternatives are delicious!

Notes

  • Store leftovers in an airtight container in the fridge.
