Ingredients
- Vanilla batter
200 g butter at room temp + some extra thin slices
200 g sugar
4 eggs
240 ml milk
1 tsp vanilla extract
370 gr flour
2 tsp baking powder
¼ tsp salt
- Chocolate batter
25 g cocoa powder
50 ml milk
15 icing sugar
- Equipment
Loaf pan & parchment paper
Whisk
Instructions
- Line a loaf pan with parchment paper and preheat the oven to 180 °C.
- To prepare for the chocolate batter, mix the cocoa powder, milk and icing sugar in a medium bowl.
- In another bowl, combine the flour, baking powder and salt and set aside.
- In a large mixing bowl, mix butter with sugar until creamy. Add the eggs one at a time and mix until incorporated. Afterwards, add the vanilla extract.
- While whisking, slowly add the milk to the batter. Then, add half of the flour mixture, whisk until incorporated, and repeat with the second half of the flour mixture.
- Add two cups of the vanilla batter to the chocolate batter and whisk until fully incorporated.
- Start adding the two batters in the loaf pan. First add a stripe of vanilla batter, then a stripe of chocolate batter, and keep alternating between the two. Use the method that works best for you, whether it is with a piping bag or just with a spoon. For me, using a spoon was the faster method so I decided to do it like that.
- Before putting the cake in the oven, put some thin slices of butter in the middle of the cake over the length of the loaf pan.
- Bake the cake for about 50 minutes, until a toothpick inserted into the center comes out clean.
- Let the cake cool for a bit before removing it from the pan. You can start cutting the cake when it is still slightly warm. Serve it as is, or topped with a chocolate ganache!
Notes
- You can easily store this cake covered at room temperature for a couple of days, to keep enjoying a slice whenever you please.
