Easy Zebra Cake Recipe

If you want a tasty and good looking cake with your coffee or tea to impress your guests, then this is the go-to recipe to make! It might look complicated, but it is one of the easiest things to make.

Ingredients

  • Vanilla batter
  • 200 g butter at room temp + some extra thin slices

  • 200 g sugar

  • 4 eggs

  • 240 ml milk

  • 1 tsp vanilla extract

  • 370 gr flour

  • 2 tsp baking powder

  • ¼ tsp salt

  • Chocolate batter
  • 25 g cocoa powder

  • 50 ml milk

  • 15 icing sugar

Instructions

  • Line a loaf pan with parchment paper and preheat the oven to 180 °C.
  • To prepare for the chocolate batter, mix the cocoa powder, milk and icing sugar in a medium bowl.
  • In another bowl, combine the flour, baking powder and salt and set aside.
  • In a large mixing bowl, mix butter with sugar until creamy. Add the eggs one at a time and mix until incorporated. Afterwards, add the vanilla extract.  
  • While whisking, slowly add the milk to the batter. Then, add half of the flour mixture, whisk until incorporated, and repeat with the second half of the flour mixture.
  • Add two cups of the vanilla batter to the chocolate batter and whisk until fully incorporated.
  • Start adding the two batters in the loaf pan. First add a stripe of vanilla batter, then a stripe of chocolate batter, and keep alternating between the two. Use the method that works best for you, whether it is with a piping bag or just with a spoon. For me, using a spoon was the faster method so I decided to do it like that.
  • Before putting the cake in the oven, put some thin slices of butter in the middle of the cake over the length of the loaf pan.
  • Bake the cake for about 50 minutes, until a toothpick inserted into the center comes out clean.
  • Let the cake cool for a bit before removing it from the pan. You can start cutting the cake when it is still slightly warm. Serve it as is, or topped with a chocolate ganache!

Notes

  • You can easily store this cake covered at room temperature for a couple of days, to keep enjoying a slice whenever you please.
