Quick cottage cheese tomato & spinach bites

These bites are the perfect snack when you're hungry and can be enjoyed guilt free as part of a balanced diet! This recipe can easily be adapted to include your favorite ingredients, so feel free to do so.
Ingredients
- 200 g cottage cheese
- 125 g flour
- 3 tsp baking powder
- 1 tsp salt
- 1 tbs olive oil
- 45 g spinach, finely chopped
- 60 g shredded (mozzarella) cheese
- 3 sundried tomatoes, chopped in small pieces
- 1 egg
- Optional: mix of seeds & spices
Equipment
- Baking tray & parchment paper
- Kitchen scale
- Food processor
- Whisk & brush
Instructions
- Preheat oven to 180°C fan forced and line a baking tray with parchment paper.
- In a small food processor, pulse your cottage cheese until it is smooth.
- To a large bowl, add the cottage cheese, salt, sundried tomatoes, flour, cheese, baking powder, and spinach, and mix together with your hands until combined.
- Divide the dough into 6 equal pieces. Roll each piece into a ball, then make the ball a bit flat and poke a hole in the middle with your finger.
- Beat the egg. Place the 6 pieces on the baking sheet and brush them with the egg wash. Optional: Top some or all of them with seeds or a spice mix you like (I topped half of mine with a mix containing sesame seeds and spices like garlic and paprika powder). Bake for 22-25 minutes or until golden brown on top. Let them cool down or eat them warm, both alternatives are delicious!
Notes
Store leftovers in an airtight container in the fridge.
